Seedling damage in pots
I’ve started plants from seed indoors, only to see some of them have the first growth on top of the stem, or even the whole sprout, disappear. This has happened with tomatoes, peppers, and cosmos. I’ve looked for cutworms, but haven’t seen any. There were some gnats. What can I do to make sure I don’t lose the rest of my starts?

This could be slugs or snails hiding under the soil but most likely a cut worm brought in by eggs hatching after your planted the seedlings. Try setting out a trap of a bit of damp newspaper and see if any enemy hides in the folds of the newspaper. You could also check at night with a flashlight to catch the culprit in the night.
