Harvesting collard and mustard greens

Hi Marianne, I have a raised garden and have collard and mustard greens. Now that they are big enough to pick do I pick from the top or bottom or do I cut? This is my 1st time trying to garden and I need help. Thanks!

Congrats on your first garden! I like to harvest my salad greens by the \"cut and come again\" method. I use a pair of kitchen scissors to cut the young greens down close to soil level. I only harvest as much as I will eat in a day. Then I water the greens that were cut down and they resprout quickly, come back, and I can cut them again. I do this when the plants are very young - such as just six inches tall. If your greens are already large you can remove the outer leaves first by pulling or cutting the largest leaves from the plant. Then harvest again once the young inside leaves mature.
