How to eat beet greens

We have a container on our front porch with about 10 beet plants that are growing quite nicely smile Not sure when to pull them and want to make sure we are able to also eat the leaves above ground? I am a Breast Cancer Survivor and heard beets are super good for me as well as the greens which have more nutrients that Spinach. Is that true and do you have any suggestions for serving the beets? What do you do with them? I’ve never grown them before, thank you kindly smile

Sounds like you are off to a great start for beet green salad! Harvest the green tops by pulling them right out of the ground when they are a few inches tall to thin the beets. Eat the young greens in salad or stir fry. If they are already taller than six inches or so you can dig up the root and snip off the tops any time over the next 3 to 4 weeks or when the underground root (the beet) is the size you prefer. Steam the leaves and roast the beets themselves or boil and use cold in salads - so delicious and yes, they really are very good for as veggies with dark colors are full of anti-oxidants.
