what veggies can be planted in Fall season in zone 8 that dont need much care?

I suggest you plant Swiss Chard/kale, spinach, onions and garlic. If you cover the new plants or seeds with a hoop house of plastic you plant lots more edibles including carrots, lettuce and radish. Keep growing, Marianne Binetti
