You should dig garlic from your garden when the tops begin to turn yellow and the base of the bulb is papery on top. Use a garden fork or shovel to dig down alongside the garlic row and loosen the soil below to upearth the garlic bulbs or cloves. Shake off the soil and store the garlic in a dry space for a few days to cure the cloves. Then wipe any remaining soil from the garlic bulbs to keep them from rotting in storage. The you can braid the tops together or just tie them in a clump and hang the harvested garlic in a dry but cool spot to store. Just break off a bulb as you need it in the kitchen.
