Basil can be cut anytime there is enough new growth to snip out the top third of the plant. To store basil just hang the leaves, stems and flowers upside down in a cool, dark closet, or garage, then store the dried material in glass jars. You can also put the fresh basil into a blender with olive oil, pine nuts and cheese to make pesto. This can be frozen in small batches for future use.
