Yes, studies have been done to prove that creosote and pressure treated wood does not release chemicals into the soil that would be absorbed by veggies. That said it wouldn't hurt to grow your root crops such as carrots and potatoes more toward the center of the bed and not so close to the wood timbers that the roots would be touching the wood.
