How can I get rid of mint plants that are taking over my small garden?

We tried diggin up the roots in the spring, but they keep returning.

Mint can be a real hostile invader - especially in wet soil. Dig up the entire plant roots and all and set it on a piece of plastic in the sun to really dry out and die before adding to the compost. You must dig deep to get all the roots - down at least one foot. You can also keep cutting the mint to the ground and spraying any new growth with Round Up so that the roots will be destroyed. A third option is to cover the crop with heavy black plastic and weight it down with rocks so no sunlight gets near the thug. It may take a year before this smother technique works.
