Marianne's Response

Sungron-question

I know that saffron comes from crocuses and I know that it’s expensive. I have lots of crocuses, but suspect that only certain ones (sativa) can be used for saffron. True?

Marianne's Response

Yes, the autumn blooming crocus or crocus sativus is the only one used for cooking and this is the saffron crocus. You can now buy this heirloom bulb from a number of retail and mail order growers including White Flower Farm, Tulip World and some Dutch bulb growers. White Flower Farm even includes instructions on how to harvest and use the pollen for saffron. Keep cooking, keep growing, Marianne Binetti
