Green sprouts on garlic bulbs

I planted garlic bulbs about a month ago and green sprouts are popping up through the soil. Will this garlic still be okay, or do I start over? I live on the south hill of Puyallup. Also my garlic from last year is still a little green. I dried it for at least a week on my deck last August. Why? Can I eat it?

First, congrats on those green shoots they just mean the garlic you planted is healthy and getting a head start on the season. It will be fine all winter. Sounds like you may have harvested that green garlic a bit early and then not given it enough time to cure or dry. You can still eat the garlic and you may even be able to cure it a bit now by storing it in room that is kept between 60 and 70 degrees for another week. Keep growing, Marianne Binetti
