Raspberry Torte Recipe

Raspberries are in season at our local market, and ripe in my garden at home. I grow some early fruiting ones that bloom and fruit on last year’s wood plus the ones that bloom on new wood which mature later in summer. There are many recipes for raspberries but my favorite way to have raspberries is to just add cream and eat! They make eye-catching decoration on pies and cakes and they are also great with chocolates so this past weekend I did a chocolate and raspberry torte which we ate with ice cream. A torte tends to be a little more dense than traditional cakes and gluten free cakes tend to be that way so this works well for me!

For the Chocolate-Raspberry torte:

4oz pack of raspberries, plus a few extra for decoration

4 oz chocolate, melted or 2 oz powdered cocoa

4oz butter

4 oz sugar

2 eggs

3 oz flour

To make the Chocolate-Raspberry Torte:

1: In a small bowl, add the raspberries plus one tbs. sugar and one tbs water;

2: Zap in a microwave for about 30 seconds to soften;

3: Sieve the raspberries to remove the seeds;

4: Beat the softened butter with the sugar until light;

5: In a small bowl, lightly beat the eggs;

6: Add the eggs slowly to the butter/sugar mix while you continue to beat the mixture;

7: Add the melted chocolate if using;

8: Add the sieved raspberries;

9: Fold the flour plus cocoa mix if using;

10: Pour into a 7-inch pan and bake in 375 oven for about 35 minutes.

Turn out when slightly cool.

Decoration can be as simple as a little sieved sugar over the top, or vanilla frosting with more raspberries on top.

I opted for the sugar and served with fresh raspberries and/or ice cream.
